This is Hunter semillon to a tee. Bright, zippy, zinging with acidity and absolute aeons of ageing potential. It’s a time-honoured winning recipe for deliciousness. There’s citrus by the bucketload at the moment – lemons, limes and a hint of orange pith. Given time, and assumingyou can keep your hands off it, that’ll blossom into honeycomb, chalk, nuts, nougat and all manner of captivating mature flavours. In the meantime, it’s a fun wine for a fun time, and sings best with a seafood or soft cheese accompaniment. If this is your first foray into Hunter sem, I envy you. Years of satisfaction await!
