Chiefs Son Distillery, a family-owned and operated small batch distillery located in Victorias Mornington Peninsula, recently launched its first commercially available peated single malt. Produced using a floral style of peat, rather than coastal peat used by most Islay distilleries, this dram is maured for three years in second-fill French Oak Sherry casks, before further developing more character from an additional year in first-fill American Oak Bourbon casks
