Ahhh, Hilltops. Feels like a setting from a Hobbit movie or the moon of Endor (Ewoks anyone?). Alas it’s simply a wine region in NSW, but one that’s churning out some really special cab sav. Because of its higher altitudes, the wines tend to be a bit more medium in body, leaning toward structure and nuance rather than power and punch. This one gives you classic blackberry and plum, but the finish is chocolate and cedar wrapped in fine-grained tannin. Just magical.
