Winery Overview Fox Creek, based in McLaren Vale, has built a reputation for crafting wines with character, depth, and regional expression. The Three Blocks Cabernet Sauvignon is made from carefully selected vineyard parcels, each contributing layers of flavour and structure. With meticulous winemakng and respect for terroir, this wine showcases why McLaren Vale remains one of Australias most celebrated regions for Cabernet. Region amp Vintage Conditions The 2020 growing season in McLaren Vale was challenging, beginning with dry conditions and a very hot start to summer. Fortunately, cooler weather arrived in January, followed by well-timed rainfall in February that refreshed the vines without compromising fruit quality. Harvest took place between 12th and 21st March, producing grapes with concentration, balance, and vibrant acidity. Winemaking Cabernet parcels were harvested and vinified in small batches, spending 812 days on skins before pressing. Some fermentations were completed in barrel to build complexity. The wine matured for 18 months in a mix of new and seasoned French oak hogsheads, with barrels hand-selected for the final blend. The result is a layered, elegant Cabernet with lifted aromatics, a rich mid-palate, and finely ripened tannins. Tasting Notes Appearance Deep red with brick-red hues Aroma Classical Cabernet notes of cassis, cedar, bay leaf, and dark chocolate, with hints of leather, nettle, and freshly tilled earth Palate Ripe plum, milk chocolate, and blackcurrant framed by savoury yet firm tannins and balanced acidity Finish Long, persistent, and structured, showing both power and elegance Cellaring Drinks beautifully in its youth but will reward careful cellaring until at least 2030.
