In the early part of the 19th century, in Burnie on Tasmania’s northern shores, one Henry Hellyer, explorer and cartographer, carved a track through the bush with a bullock gang and a few basic tools. This road named in his honour is home to an eponymous distillery that makes Australiaâ€s biggest selling locally crafted whisky. A scent of vanilla presents as the palate detects citrus marmalade and seared winterberries over a toasty overlay.
