WINERY INFORMATION A family owned and operated winery Thorn-Clarke was established by David and Cheryl Clarke Both their families have rich and vibrant histories in the Barossa Valley wine region Thorn-Clarke released its very first wines in the year 2001 under the leadership of Senior Winemake Peter Kelly The team here believes that great wines are produced in the vineyard and not the winery TASTING NOTES The ripe fruit used to craft William Randell Cabernet Sauvignon was picked at night Fermentation and pressing were followed by maturation in French oak barrels The resulting wine displays a deep red colour with a red to purple haze Its complex nose offers lifted aromas of coffee and spice that are complemented by cassis leaf undertones These fragrances effortlessly lead to an elegant palate containing cassis and red currant flavours French oak nuances of cream cinnamon and tobacco complete the palate while long silky tannins balance it culminating in a persistent finish This rich and intense red wine boasts of a great acid backbone Enjoy it with lasagna Gorgonzola cheese or bittersweet chocolate
