WINERY INFORMATION ldquo To make exciting refined wines made exclusively from the Adelaide Hills region that rank amongst Australia rsquo s best rdquo This is the vision that brought together cousins Martin Shaw and Michael Hill-Smith into an alliance that saw the birth of Shaw Smith Winery his winery has three separate vineyard sites each planted to distinct grape varieties They specialize in cultivating Chardonnay Sauvignon Blanc cool-climate Shiraz and Pinot Noir Aggregating about 86 hectares their vineyards are ndash Balhannah Vineyard Lenswood Vineyard and their latest acquisition Tolpuddle Vineyard These high-altitude vineyards are between 420 to 500 meters above sea level The maritime climate aspect and soil profile have increased their success as winemakers and grape growers TASTING NOTES This Pinot Noir variety imported from lush vineyards in Adelaide Hills is a dry red wine light and perfumed with an alcohol level of 13 5 This elegant Pinot Noir has coloured a medium red hue highlighted with a youthful purple tinge Its depth of cherry fruit on the bouquet and palate enhances its varietal expression The nose picks up aromas of dark cherry strawberry floral perfumes and lilacs coupled with a subtle oak-induced spice which provides texture and length The palate is well-balanced and long The soft tannins and bright acidity keep the wine fresh and taut while the dominant structure lends a textural mouth-feel This delightful experience ends on a lingering finish with a lick of spice This smooth and easy-to-drink wine fare better with braised duck garlic-roasted tenderloins oven-baked salmon fillets and lean meats
