WINERY INFORMATION Winemaking We harvested in late February to retain the freshness in the fruit To add depth and interest we used a lot of whole bunch fermentation in this year Overall there was about 30 whole bunch fermentation in the wine The rest of the fruit was carefully destemmed and had sorted Fermentation usually begins in about 3 shy 5 days depending on the initial yeast counts coming in from the vineyard Tasting Notes Our No 8 displayed a rich medium to very bright red colour On the nose its fragrant red berry fruit characters have beautiful upright complexity The flavour has excellent fruit density with soft mouth filling characteristics This Pinot Noir has abundant length of bright fruit varietal flavours and texture on the palate it s complex complete and with age comes further development
