WINERY INFORMATION Vineyard During the mid 1980s Dr John Possingham and Carol Summers located an abandoned vineyard property hidden away in a corner of Blewitt Springs Thirty years down the line Possums Vineyards with its dense sandy soils and cool gully breezes has grown into a reputed winey housing the latest technology and machinery required to produce elegant and graceful wines nbsp Winemaking Careful selection of Shiraz grapes was supervised so that only the best quality of fruit was utilized to create this magnificent Shiraz A hands-on approach and minimal outside intervention were practiced so that the regional as well as varietal fruit flavours could get a chance to shine through the bottle TASTING NOTES This 2012 Shiraz wine is deep purple in colour Its bouquet gives off lifted fruit aromas while the full weighted and complex palate contains flavours of forest fruit with dark chocolate lashings thoroughly imbued throughout the body Either consume this wine upon release or cellar it for a period of 10 years to allow all its flavours and characters to fully enhance Pair this wine with lamb chops sirloin burgers or braised lamb and onions to enjoy the full taste of this marvelous wine
