Winery Overview Located in north eastern Victoria, Gapsted Estate sources fruit from the cool climate King Valley, a region recognised for its slow ripening conditions and natural balance. The Buffalo King Valley Chardonnay 2023 reflects this environment, focusing on fruit purity, structure, and carful oak integration. The wine is crafted to highlight regional character while remaining approachable and well balanced. Region and Vintage Conditions The 2023  vintage in the King Valley was shaped by a wet and cool spring followed by a long, dry summer. These conditions allowed the vines to progress steadily through the growing season, producing clean fruit with strong natural acidity and flavour concentration. Lower yields contributed to quality and ageing potential, resulting in a Chardonnay with clarity, balance, and length. Winemaking Techniques The Chardonnay was harvested in late March at an ideal ripeness of 12.4 baumé. After gentle pressing, the free run juice was cold settled and fermented using a selected Chardonnay yeast. Once fermentation began, the wine was transferred into French oak barrels, with 30 percent new oak, 30 percent one year old barrels, and the remainder older oak. Fermentation took place over 20 days at controlled temperatures, with daily lees stirring during the final stages to build texture and complexity. The wine then matured in barrel for 12 months with regular lees contact before being clarified and bottled. Tasting Notes Appearance Pale to medium straw yellow with good brightness.Aroma Delicate yet layered aromas of arrowroot spice, lemon zest, ripe peach, and subtle nougat.Palate Focused acidity carries flavours of Meyer lemon, custard tart, and ripe stone fruit, supported by well-integrated oak that adds structure and texture.Finish Long and persistent, showing balance, definition, and purity typical of King Valley Chardonnay. Key Characteristics Cool climate Chardonnay from the King Valley Bright citrus and stone fruit flavours with refined oak influence Balanced acidity, layered texture, and extended finish Vegan friendly and suitable for medium term ageing Food Pairing Recommendations Pairs well with southern crayfish, burnt butter sauces, saffron rice, fresh snow peas, or lightly creamy seafood dishes. The wines acidity and structure complement both delicate and richer flavours.
