BackgroundThe GCV White Hut Clare Valley Shiraz 2021 is a premium red wine sourced from the Gaelic Cemetery Vineyard, located in the renowned White Hut subregion of Clare Valley, South Australia. This wine is crafted to showcase the unique terroir of the area, known for its high altitude and undulatng hills, which contribute to the production of grapes with exceptional quality and character.Vineyards and Vintage ConditionsThe 2021 vintage was characterised by cool and dry growing conditions, leading to even budburst and an ideal fruit set. Despite a hot and windy day in January causing some vine stress, the Shiraz maintained good varietal character and balanced ripening, resulting in fruit with excellent colour and richness at moderate alcohol levels. WinemakingThe Shiraz grapes were harvested in the cool early morning of February 25th and 26th, 2021, and transported to the winery where they were destemmed into small open-top fermenters. After a 72-hour cold soak, fermentation began naturally with indigenous yeasts. The ferments were carefully managed with gentle pump-overs to extract colour and flavour while maintaining elegance. The wine was then aged in old oak barrels, enhancing its early drinking appeal.Tasting NotesAppearance Deep ruby colour with purple hues.Aroma Notes of ripe blackberry, dark cherry, and subtle hints of violet and white pepper.Palate Medium to full-bodied with flavours of blackcurrant, plum, and a touch of eucalyptus, complemented by well-integrated tannins.Finish Long and satisfying, with lingering notes of dark chocolate and a subtle minerality characteristic of the White Hut terroir. Food PairingThis Shiraz pairs beautifully with grilled meats, roast lamb, or hearty pasta dishes. Its balanced structure and rich flavours make it a versatile companion for a variety of meals.
