BackgroundThe GCV Celtic Farm Shiraz Cabernet 2021 is a premium red blend crafted by Gaelic Cemetery Vineyard, a boutique winery situated in the Clare Valley, South Australia. This wine exemplifies the regions cool-climate terroir, renowned for producing wines with depth, structure, and elegance. Th Celtic Farm label signifies a commitment to small-batch, single-vineyard wines that showcase the unique characteristics of the land.Vineyards and Vintage ConditionsThe 2021 vintage in the Clare Valley experienced a cool and dry growing season, allowing for even budburst and an ideal fruit set. Despite a hot and windy day in January causing some vine stress, the Shiraz and Cabernet Sauvignon grapes maintained good varietal character and balanced ripening. The resulting fruit exhibited excellent colour and richness at moderate alcohol levels, contributing to the wines complexity and structure.WinemakingThe Shiraz and Cabernet Sauvignon grapes were handpicked and fermented separately in small open-top fermenters. After a 72-hour cold soak, fermentation began naturally with indigenous yeasts. The ferments were carefully managed with gentle pump-overs to extract colour and flavour while maintaining elegance. The wine was aged in French oak barrels, enhancing its complexity and adding texture, spice, and a long, fine-grained tannin profile. Tasting NotesAppearance Deep ruby red with aromatic notes of blackberry, cassis, and subtle eucalyptus.Palate A complex structure with ripe dark fruits of blackberry and plums, complemented by savoury nuances of roasted walnuts, smoked meats, and black olives.Finish A long, granular tannin profile that adds texture and depth to the wine.Food PairingThis Shiraz Cabernet blend pairs beautifully with grilled meats, roast lamb, or hearty pasta dishes.
