Despite a hot and windy day in January causing some vine stress, the Shiraz and Cabernet Sauvignon grapes maintained good varietal character and balanced ripening. The resulting fruit exhibited excellent colour and richness at moderate alcohol levels, contributing to the wines complexity and structure.WinemakingThe Shiraz and Cabernet Sauvignon grapes were handpicked and fermented separately in small open-top fermenters. After a 72-hour cold soak, fermentation began naturally with indigenous yeasts. The ferments were carefully managed with gentle pump-overs to extract colour and flavour while maintaining elegance. The wine was aged in French oak barrels, enhancing its complexity and adding texture, spice, and a long, fine-grained tannin profile.
