In this case, the wine is from Beechworth in Victoria’s northeast and is a great way to dip your toe into what is otherwise a super-premium region. It’s a blend of 60% caberne and 40% sangiovese, no doubt inspired by some of the finest Tuscan wines. The wine is medium-bodied and full of dark berries from the cab, and vibrant high-toned cherry from the sangio, with soft tannins. I suggest approaching this wine in the same way you would a Rosso from Italy or Tinto from Spain. A splash for the pot, a splash for the cook and a heap flowing for the guests.
