Allow us to boast a little about this number, will you? Of course, we know Yarra Valley produces some of the best Aussie sparkling nex to the cool-climate vineyards in Tassie. And it’s a mark of a truly great year when the winemaker decides not to blend it in a non-vintage style. There’s only a handful of years that this producer has made this wine, one that spends 30 months en tirage for fine bubbles and exceptional depth of toasty notes. It’s still all kinds of crisp, even after all these years of bottle age. Golden apple, ripe stone fruits, honey, almonds and brioche seamlessly find themselves intertwined on the palate, with a delightful lemon curd acidity. You’d almost think we made it from how enthusiastic we are about this wine. Alas, we’re alright just being the consumers when the consuming is this good.
