WINERY INFORMATION Winemaking Following the process instituted Chardonnay we fermented the entire Chardonnay vintage in barrel Although this can be incredibly time consuming we strongly believe the added complexity in the wine makes the process worthwhile Following fermentation most batches wee racked to tank while 35 of the wine remained in the barrel In September the wine was racked together filtered and bottled TASTING NOTES The colour of the Chardonnay is vibrant straw The nose reveals peach pear struck match and toasty French oak notes The palate carries a sweet middle core of stone fruits quince cashews and spice finishing bright and textured from the natural acidity
