This lively aperitif style has a light bright yellow hue and a typical blanc de blanc bouquet of straw and egg custard It rsquo s crisp and refined in the mouth with focus intensity and persistence finishing with lip-smacking dryness and energising acidity The hand-harvested Chardonnay was whol bunch pressed with minimal rotations to maintain the delicacy of the structure the juice was clarified then fermented to dryness in stainless steel tank The base wine was triaged in August 2012 and the wine remained on lees in a bottle until November 2015 It was disgorged and a small dosage added for balance Served with chilled as an aperitif Lovely with oysters
