WINERY INFORMATION Vineyard Houghton is one of those epochal Western Australia wineries that have a prominent history going back over 175 years As both vigneron and vintner Houghton has proudly crafted wines with a steadfast dedication passion and a stronger palate which has set them apart fro the rest This strong outfit first gained prominence in 1937 when their first Houghton White Burgundy vintage was produced In 1880 Houghton received its first award the Order of Merit Thereafter Houghton has garnered 200 various awards and about 3 700 medals from various wine shows competitions and highlighted wine festivals making them the most awarded winery in its side of Western Australia Winemaking The fruit was picked and harvested between 12 and 13 Baume density measure of liquids then gently crushed and fermented as separate parcels Fermentation on skins in 50-tonne static fermenters with dimple plates to manage temperature in low to high pressure lasted between 7 to 9 days Following this vital phase the wine was gently pressed off skins and then matured in French oak for 12 months before being finished and blended The final stage was bottling using closure screw caps and packaging TASTING NOTES This dry red wine is a complex blend of red berries enhanced by black pepper and oak The palate is a seamless and elegant combination of stylish fruits and balanced oak Its soft and juicy tannins lead to a lingering delicious finish The wine rsquo s colour is a brilliant cherry red with a vibrant scarlet hue The nose displays intensive aromas of plums and raspberries further heightened by vanilla spice nutmeg and traces of charry oak At best food and wine pairings are a hit-and-miss pursuit nbsp Then again individual preference is always a personal affair However here are a few suggestions to go with your Cabernet Shiraz Merlot Red classic slow-cooked shoulder of lamb a limited selection of cheeses or Moroccan spiced chicken Blending these three classic varieties has created a versatile wine suited to many occasions While this wine is good for current drinking it is also suitable for short-term cellaring nbsp
