WINERY INFORMATIONWinemakingThe grapes were given four days to cold-soak before a natural wild yeast initiation of the ferment The wine spent 24 days on skins before being pressed and transferred into French Allier barriques 30 new for malolactic fermentation and further aging for 18 months Unfned and unfiltered TASTING NOTESAn exceptional rich ruby red wine of outstanding depth and structure Fresh vibrant and alluring it displays notes of fresh raspberries black cherries and dark plums with a smoky undertone held together with ripe tannins and fine acidity and minerality This elegant stunner will age beautifully over the next 10 years A perfect match for poultry pork lamb and pasta dishes
