Gapsted’s flagship rosé is lovingly made from King Valley pinot noir, grown on vines that feature the eponymous â€ËÅ€œballerina canopy’, which as you might imagine: some vertically trained shoots with some other ballerina dress-like shoots hanging down either side of the trellis. It makes for a pretty, but labour intensive growing system, that allows more airflow and control of grapevine vigour. Gapsted follow this kind of meticulous hands-on vineyard word with the same attention to detail in the winery. The grapes see small batch fermentation and oak maturation, and the result is the purest expression of these dance-worthy grapes you could hope for.
