WINERY INFORMATION Lindsay Corby rsquo s entry into the winemaking industry began quite humbly As a student his interest in wine kindled so much that in the mid-80 rsquo s he pursued viticulture and winemaking What followed was a string of various jobs and experiences which eventually led him t his future role as winemaker at Cosmo wines He proudly states ldquo Cosmo produces wines that ultimately have drinkability while showing their regional characteristics rdquo TASTING NOTES Many would agree that Chardonnay is the world rsquo s most popular grape variety lovingly known as winemaker rsquo s wine Cosmo Chardonnay is pale straw in colour with some faint green hues This light summer drink is a delightful wine with peach and brioche aromas It is soft and slightly sweet with a broad but well-balanced palate suggesting subtle use of spicy French oak About a third of the wine was fermented in French oak with extended time on yeast lees adding palate weight and complexity As Chardonnay is a versatile variety it can be partnered with foods such as aged cheese roast turkey mushrooms pork belly and scallops nbsp
