Certified organic. Bernard Defaix's Petit Chablis is drawn exclusively from Kimmeridgian-based soils unlike most Petit that generally comes from the low-lying sites on Portlandian limestone to the north of the commune. It's not necessarily the type of limestone but its location that makes the diffeence. This is a glass of crunchy vibrant Chablis with flinty mineral threads woven through notes of grapefruit juicy Cox's apple-like fruitiness and some quinine like minerality on the close. Still throwing off its youthful exuberance what you get now is a tangy racy mouthful of freshness. Truly excellent Chardonnay for its level.
