Thistle Hill Chardonnay from the Mudgee wine region in New South Wales has been manufactured using grapes from the Thistle Hill vineyards as well as premium - quality Chardonnay grapes sourced from Hunter Valley The grapes were subjected to natural fermentation in French Oak barrels that were up to3 years old There was also a 6 - month maturation phase on yeast lees combined with frequent stirring of the fruit blend All this resulted in the creation of an elegant Chardonnay that displays complex fruit flavours of citrus and grapefruit coupled with subtle oak notes
