WINERY INFORMATION Winemaking The vintage had perfect growing conditions for the entire spring and summer We had small events of rainfall at the idyllic time which allowed for really good growing conditions and nbsp great fruit development The wine was processed in small batches in open-top ferenters with heading down and with small amounts of whole-bunch nbsp fermentation This allowed for the gentle extraction nbsp of the desirable flavours and structural components nbsp evident in this wine The nbsp fermentation took between 6 and 9 days on skins prior to pressing off to barrel for malolactic fermentation The Shiraz is then aged for 12-16 months in oak with minimal intervention prior to bottling TASTING NOTES The Taltarni T Series Shiraz shows cherry and raspberry with white pepper and peach On the palate it delivers a medium body of supple tannins and luscious fruit with what seems to be an endless finish
