With 2011 being the best sparkling vintage on record at Taltarni, it seems only fitting that a wine like this should be born. The growing season was cool and extended, allowing acid retention never before seen at Taltarni. The fruit was impeccable, showing varietal character and complexity, whichwidened the scope in which we could work at the winery. With passive oxidative treatment at the press, and cold fermentation in small cuvees, we tried to show the true quality of the fruit along with providing a wine of texture and complexity. Partial malolactic fermentation and small amounts of time in oak complemented this wine's structural journey which made the blending very simple. Age on lees of nearly four years provided this wine with another string to its bow in regard to autolytic character present in the background.
