There’s a little touch of oppulence in all of us, and as much as we’d all like to drink vintage sparkling every day, we’re not all Rockerfellers. But what if we didn’t have to be? What if the answer to our dreams was sitting right in front of us, courtesy of a gem producer in the Mornington eninsula? Stonier have breathed life into this traditional method bubbles, and it’s no easy feat to do with vintage sparkling. For the most part, chardonnay is the star here (92%), early picked to preserve the crisp acidity and delicate profile. A little seasoning of pinot noir and pinot meunier round things out, being picked a little later to provide body to this incredibly racy number.
