All St Hallett wines are made from 100% Barossa fruit. Shiraz is king in the region, but our winemakers are always on the hunt for good quality Barossa Cabernet that can flourish in certain areas. During the ripening period, our winemakers and viticulturalist have constantly monitored both th sugar/acid ripeness and flavour development, co-ordinating the harvest when all parcels are at their optimum.All vineyards are crushed and fermented separately. The Cabernet vineyards destined for this wine were fermented between 6 and 8 days at 22 to 24 degrees. Post fermentation the wine was partially matured in French and American Oak before being blended and bottled.
