The wine is 100 cabernet sauvignon Houghton clones the fruit picked and sorted in April 2014 It was cold soaked in a small fermenter for six weeks with minimum pump overs before undergoing an extended and gentle maceration Sixty-five percent of the wine was matured in new Bordeaux oak barrique for eighteen months The balance went to one-year-old 25 and two-year-old 10 Bordeaux barriques for the same period The wine will be bottle aged for a further twelve months before release
