Inspired by our Distillery Dog Ruby we have made Ruby with the Rosella Flower (Hibiscus sabdariffa) to give it the stunning colour and subtle floral flavour. Using our Pot Still we distil infusing 16 Botanicals and the all-important Juniper. Sourcing our botanicals locally helps guide our flavour prfile, nearby grown Rosebuds, Rosella, Tenterfield Strawberry Gum (Eucalyptus Olida) build the delicate flavour. The colour will change the over time, but the flavour will go on. Enjoy on its own with tonic or shake it up as a Ruby Blue!
