Despite being 100% rye grain, this whikey is fresh and light... with a maple-y, candy corn entry and a kiss of spice on the finish.' The Wall Street Journal Koval Distillery is the first (legal) distillery in the city of Chicago since the mid-1800s. Founders Robert and Sonat Birnecker place an emphasis on grain-to-bottle production, thoughtfully monitoring every step of the distillation process. From sourcing local, organically grown grain, to only using the "heart" cut of the distillate, Koval has established themselves as one of America's leading small-batch, independent distillers. Like all of their spirits, Koval's Rye Whiskey is made using only the heart-cut of the distillate. 100% rye grain is used in the mash, without any adulteration from barley or other malt. You might think this would lead to a spice-laden, full bodied overload in the glass, but Koval's delicate touch prevails. Lightly spiced with cinnamon and pepper, and a kiss of vanilla, this is exceptional whiskey.
