Winery Background Macaw Creek Wines is a family-owned, organic winery in the Clare Valley, South Australia, committed to sustainable viticulture and minimal intervention winemaking. The estate focuses on producing wines that authentically reflect the regions soils and climate, highlighting purity offruit and expression of terroir. Vineyards and Vintage Conditions The 2021 vintage experienced warm days and cool nights, ideal for Shiraz grapes to develop ripe, concentrated flavours while maintaining freshness. The organically managed vineyards, with well-draining soils, contributed to the wines depth, vibrancy, and balanced acidity. Winemaking Grapes were hand-harvested and basket pressed to gently extract pure juice while preserving varietal character. Fermentation took place in small batches with careful extraction of colour and tannins. The wine was matured in French oak barrels to integrate spice and structure, resulting in a polished, full-bodied expression of Clare Valley Shiraz. Tasting Notes Appearance Deep ruby with purple edges Aroma Aromas of blackberry, dark plum, and subtle hints of chocolate and spice Palate Full-bodied with layered dark fruit flavours, smooth tannins, and integrated oak notes Finish Long, structured, and elegant with lingering dark fruit and spice Food Pairing Pairs excellently with roasted or grilled meats such as lamb, beef, or game.
