The fruit was sourced from 70 year old vines planted by the Howard family in Pokolbin The fruit was de-stemmed crushed and cold soaked for two days to extract colour and flavour The wine was fermented in an open top tank and plunged twice daily for 10 days After pressing the wine was matured for10 months in French oak The aim was to produce a nbsp medium bodied style of wine that is reminiscent of the Hunter Shiraz of old fruit driven and savoury with supporting oak
