WINEYARD Always a very important signature wine within our Clare portfolio the Covenant is designed to capture the very essence and elevated distinctiveness of both the region and the vintage WINEMAKING Shiraz always puts its best foot forward in the Valley and the 2013 vintage was no exceptio Its deep colour lifted aromas fi ne texture and complex structure a hallmark of the warm and dry harvest conditions that allowed the winemakers the perfect canvas to create an outstanding cuvee Along with the fi nest Rieslings the Clare Valley has produced some of the most sought after Shiraz in the world Selected parcels of handpicked fruit were fermented separately from five vineyards across the region and allowed to age for 18 months in small French oak casks before final blending and bottling TASTING NOTES Colour Deep red in colour with bright crimson hues Aroma A generously lifted nose featuring black cherries savoury meats kitchen spices and subtle charry oak notes Palate Crafted in a style that will appease now or reward further cellaring the palate offers a richly textured yet surprisingly cultivated mouthfeel The dark fruits cherries and spices carry over from the nose superbly and combine expressively with the quality French oak and natural wine tannins
