Evans and Tate Breathing Space Sauvignon Blanc

The Breathing Space Sauvignon Blanc is produced from vineyards that cover the entire Margaret River winegrowing region This approach is unique as the wine captures the array of Sauvignon Blanc characters as you move throughout the region All fruit for this wine was picked between midnight and sunrse which ensured the fruit reached the winery as cool as possible Fruit from select vineyard blocks with green flavoursome skins protected from the sun during ripening were allowed extended time on skins prior to pressing This imparts a lovely mouthfeel and assists in extracting the intense flavours from the Sauvignon Blanc grape skin Following a light pressing the juice was cold settled at 10 deg C for approximately 48hrs before being racked warmed to 17 deg C and inoculated with a selected yeast strain This yeast strain helped preserve the aromatic intensity of the characters typically found in Sauvignon Blanc During fermentation cool temperature were utilised to encourage aroma production texture and overall varietal character The wine was then blended and lightly fined before being stabilised and filtered only once to produce a bottle ready wine Colour Very pale and in brilliant condition ndash classic youthful Margaret River Sauvignon Blanc Aroma Passionfruit fig spiced apple and honeydew melon aromas fill the nose A subtle grassy note adds the stamp of Sauvignon Blanc from Margaret River Palate An intensely flavoured palate with loads of flavour and distinctive Sauvignon Blanc character coming through right from the start The juicy acidity combined with the sheer volume of middle palate flavour makes for an outstanding Margaret River style The variety of layers of passionfruit fig and melon drive the palate which is superbly balanced and long A true reflection of what WA Sauvignon Blanc is renowned for- excellent varietal character and regionality
