From the highly particular terroirs of Hampshire, near Winchester, where chalk is the dominant element in the soil, this sparkling wine was developed using a thoroughly classic and traditional method. The blend consists of a large majority of Pinot Noir and a sufficient proportion of Chardonnay to bing lightness and finesse. At first glance, it is a lovely and delicate pale straw yellow in color. To the nose, the key word that comes directly to mind is “freshnessâ€, but also “finesse†thanks to the yellow citrus aromas that emerge. The end note is straight and free of harshness, with a well-controlled dosage that leaves no impression of sweetness.
