From selected parcels of fruit taken from vineyards around Gundagai, and Canberra, prepare yourself for a pure and perfumed nose of black cherry, white pepper, cinnamon, nutmeg and clove. The palate is focused and intense with no shortage of dark chewy fruit and a wash of fine grippy tannin to finis. A char-grilled veal chop - at least three fingers thick - and big a dollop of grainy mustard would make for a perfect match here.
