A selection of very old vines of Pinot Noir planted on Flinty clay soil, with southwest exposure. The alcoholic fermentation is made in stainless steel thermo regulated tanks (10 to 14 days) between 26 and 32 °C. During thi time, grapes are roded and the juice raised twice a day to break the hat of marc and extract the best colours and the most ripe tannins. After a malolactic fermentation, the wine is aged during 6 months in oak barrels.
