Most rum is made from molasses. In the French West Indies rum is made by fermenting then distilling pure sugar cane juice. This gives you a rum that is fresher more elegant and fruit driven. Only 1 % of the worlds rums are distilled this way most are in Martinique and have AOC status (protectedand strictly regulated method of production like Champagne Bordeaux...). This is a fine white rum rich and very full in flavour with a complex aromas of tropical fruits.
