WINERY INFORMATION The story of De Bortoli wines dates back to 1928 when Vittorio De Bortoli purchased a 55 acre mixed fruit farm got 15 tonnes of Shiraz grapes from local growers for free and crushed them to produce his own wines The company initially started as a producer of dry table wines ostly for fellow European immigrants Located in Bilbul in New South Wales the official motto of the company is Semper ad Majora meaning lsquo always striving for better rsquo TASTING NOTES The Chardonnay and Pinot Noir grapes used to craft Jean Pierre Classique were handpicked crushed and fermented in Charmat tanks to add bubbles as well as a creamy texture This dazzling blend displays a pale straw colour with persistent beads throughout The attractive bouquet is perfumed with fresh cream and bread dough aromas coupled with hints of clean citrus and subtle floral notes Balanced and supported by a delicate layer of acidity the juicy palate packs fresh fruit flavours The fine bubbles offer a creamy mouthfeel culminating in a dry yet sweet and lingering finish Crafted to be enjoyed as an aperitif upon release this light bodied blend can also be cellared for 3 years from vintage to develop its full flavours Suggested food pairings include natural oysters with lemon and black pepper hard cheeses and salmon blinis nbsp
