Here’s a chardy that receives plenty of attention in the vineyard and the winery. There were two (hand) picking runs through only the best part of the vineyard, with 100% barrel fermentation in French oak barrels (30% new), as well as nearly 100% malolactic fermentation. Each batch was kept sparate until final blending. And then a quarter of the wine was dropped to the next tier to ensure only the best bits made the final blend. Now that’s a rigorous selection process!
