WINERY INFORMATION Vineyard Eden Valley was once heavily forested with eucalypt nbsp Pockets remain with some majestic trees providing a nbsp reminder of what the landscape must have looked like nbsp before clearing lsquo Cool Woods rsquo image of trees is a true nbsp representation of the viw from our cellar door on a nbsp typically crisp and foggy winter morning The Cool nbsp Woods white range is sourced from not only our Eden nbsp Valley Vineyard but other cool climate South Australian nbsp regions The Shiraz and Cabernet Sauvignon are nbsp produced with a combination of fruit from our Barossa nbsp Vineyard and other South Australian regions The wines nbsp display great varietal character are well balanced and nbsp made to enjoy with friends family and food Winemaking Crushed de-stemmed and then pressed using a membrane press Pressings were not used and ferment commenced using French yeast at 12-15 degrees celcius The ferment was kept slow and cool to retain all the natural varietal flavours and aromatic qualities The wine was racked filtered and then bottled soon afterwards so the wine was a true expression of the grape terroir from which it was made TASTING NOTES Cinnamon pear and poached peach on the nose with some leesy complexity The palate is rich and rounded there rsquo s good weight and a rich velvet texture making it true to form - the wine is well balanced with a clean finish
