60% Merlot, 25% Cabernet Franc, 15% Cabernet Sauvignon. Grapes are selected by hands after harvested by machine sorted and de-stalked before being gently pressed in order to extract maximum colour in the juice. Then juice undergoes a traditional fermentation, left on lees for up to 28days, with regular pumping in small stainless steal vats, under temperature control process.
