WINERY INFORMATION Winemaking The hand harvested Chardonnay was whole bunch pressed with minimal rotations to maintain the delicacy of the structure the juice was clarified then fermented to dryness in stainless steel tank The base wine was tiraged in August 2012 and the wine remained on lees i bottle until November 2015 It was disgorged and a small dosage added for balance TASTING NOTES This lively aperitif style has a light bright yellow hue and a typical blanc de blanc bouquet of straw and egg custard It rsquo s crisp and refined in the mouth with focus intensity and persistence finishing with lip-smacking dryness and energising acidity
