Our very best blocks of Mt Barker Cabernet Sauvignon are selected for this wine. For the 2014 vintage, the fruit was from the Windy Hill and Langton vineyards and harvested over a one week period in mid-April with an average of 14 Baume. The batches of Cabernet were fermented separately at moderae temperatures with regular pump overs to maximise the colour and flavour extracted. A portion was then left on skins post ferment before being matured in French oak, ~40% new, for 16 months before bottling.
