WINEYARD Demand for the popular Trentham Two Thirds prompted the winemaking team to create a two thirds red wine with great flavour yet low in alcohol nbsp The merlot variety is well known and characterised by its attractive berry fruit flavours softness and lushness For this reason Merlot was prfectly suited to produce this low alcohol wine The grapes were picked in late February once the tannins were ripe and good flavour and colour had been achieved WINEMAKING Following harvest the grapes were de-stemmed gently crushed and fermented on skins The wine fermented on skins for only 3 days to minimise tannin extraction yet long enough to extract sufficient colour and flavour from the skins Just before the end of fermentation the wine was clarified and kept cool to retain the fresh fruit characters before bottling in October 2015 TASTING NOTES Colour Vibrant red and purple in colour Flavour Full of flavour with generous berry fruit flavours and a touch of spice Food Pairing This is a perfect lunch wine to enjoy with a wide variety of foods especially duck and lamb dishes
