WINERY INFORMATION Vineyard The vineyards were planted in the early 1970s on what was then at almost 500 metres above sea level one of the highest vineyards in South Australia The rows are planted on the contour in shallow stony soils mainly on steep eastern facing slopes Winemaking All frui was blended at the receival bin destemmed and chilled to 5oC nbsp To achieve the desirable level of colour and flavour extraction the juice was left on skins for around 20 hours in the press nbsp The free-run juice and light pressings were then cold-settled racked and fermented cool to express the fruit characters of both the Malbec and Cabernet Sauvignon TASTING NOTES Vibrant crimson with a purple tint nbsp Aromas of wild strawberries blackcurrant fresh cranberry and hints of rosewater nbsp The palate is slick fresh and lively with some natural acid backbone There is a succulent balance of flavours that include cherry Satsuma plum and raspberry Food Pairing This wine is best served chilled especially during the warmer months and is a great match for many food styles particularly duck and light meats fresh seafood and contemporary Asian cuisine
