An incredibly mild summer with above average rainfall ensured slow, even ripening of the fruit. To preserve delicate fruit flavours, the fruit was harvested in the cool of the night and delivered in small batches to the winery. The grapes were crushed, yeasted and pumped over in traditional styleto avoid the extraction of bitter tannins. Select parcels received American oak maturation for 10 months to add complexity and structure prior to final blending and bottling.
