A traditional, bottle fermented sparkling wine. A wine of rich Pinot Noir fruit, but showing elegance and finesse. It is full flavoured with a round middle palate and a finish of fresh, finely tuned acid. The traditional method sees classic varieties harvested early, blended and re-fermented in abottle to capture the fine bubbles. Further maturation on fermentation lees produces characteristic yeasty aromas and flavours.
