Delatite Catherines Block Reserve Gewurztraminer

Our Reserve Gew uuml rztraminer comes from Catherine rsquo s Block named for David rsquo s wife an old lucerne paddock that was planted to grapes in 1972 and is made very much in the mould of the vendage tardive wines of Alsace The fruit for this wine was allowed to hang on the vine for ten day longer than our dry lsquo Deadmans rsquo Hill rsquo to allow more sweetness and a more intense flavour to develop in the berries The fruit was hand-picked and then crushed into our press where it was allowed to sit for six hours on skins allowing the dehydrated botrytised berries to release their sugar into the juice The juice was then cold settled in the tank before warming up and undergoing natural wild ferment in the tank The ferment was stopped while there was still 60g L of sugar left unfermented in the wine It was then prepared for bottling without any use of fining agents and bottled The wine has a lovely pale straw colour with a nose of musk and roses The palate is of course sweet but is balanced with a clean acid finish
